       Product Description:     Sweet Spanish Onions provide a firm, succulent product that is          ideal for use as a food ingredient. Upon entering the processing plant the onions are sized and peeled to custom specifications using the latest vegetable processing equipment. All processing is in accordance with good manufacturing practices.

 

     Cut Sizes: 1/4”, 3/8”, 1/2” and 3/4” Diced or Strips.

 

    Preservatives:          None

 

    Pesticide Residues: Guaranteed within acceptable levels.

 

    Storage:   Recommended 0 degrees Fahrenheit or below.

 

    Metal Detection:     Stainless steel rating - .094

                                                       Mild steel rating - .033

 

     Package Code: Customer product number if requested.

                                              Item number with date and code.

 

   Packaging:   40# - 45# cases, HPT 41, HPT 34 totes, other supplied by buyer.

   Quality Checks:     A complete HACCP Program is in place.  Product checks are taken and                                         recorded continuously throughout production run.  Control and Critical                                         Control Points are continuously monitored and recorded.  Onions are                                         tested daily for microbiological count.

                                             

    Grading Criteria: Color: bright, practically uniform white, but not more than 20% green                                                 tinge on the total onion.

                                                Character: firm and crisp

                                               Defects: three but not more than one major

 

   Microbiological Standards:     Standard plate count:  <100,000 per gram

                                                Coliform:    <100 per gram

                                   Confirmed E Coli:   < 10 per gram
